Uzura Ya

"Uzuraya," located in Togakushi, is a renowned Shinshu soba restaurant consistently selected as one of Tabelog's Top 100 Soba Restaurants from 2017 to 2025. Their handmade soba, distinguished by its rich aroma and firm texture, is simple yet highly refined, and enjoyable with their dipping sauce, various condiments, and even the soba-yu. Their tempura, especially the maitake mushroom tempura, is also highly praised. The restaurant offers a calm atmosphere with tatami seating, operating as a charming standalone house eatery. Reservations are not accepted; a queuing system is in place where guests sign up before opening hours due to its popularity. Despite the wait, the high level of hospitality matches its reputation.
