Hitosh Honten is an immensely popular izakaya in Ishigaki, Okinawa, widely known as one of the hardest restaurants to book, yet celebrated for its exceptional quality and value. It has been recognized as a Tabelog Izakaya Hyakumeiten (including WEST in 2025 and 2024, and national in 2021). Specializing in fresh seafood and local Ishigaki ingredients, signature dishes include exquisite maguro (tuna) preparations, Ishigaki beef sushi, uni somen champloo, mozuku tempura, and the highly recommended squid ink fried rice. Despite the challenge of securing a reservation (some reviews mention over 100 calls), the delicious food and cost-performance make it a must-visit.
