This dish, which features sesame crackers, sesame cream, and sesame tofu, is all made from scratch using homemade recipes. Just like our well-loved "Takikomi Donburi" (seasoned rice in a clay pot), it's one of our signature menu items that you definitely don't want to miss. The subtly sweet and fragrant sesame crackers are carefully roasted to enhance their flavor, mixed with a special dough, and baked to perfection. The sesame cream, with its pleasant bitterness, is made by blending reduced Japanese sake with sesame paste, resulting in a smooth texture. Meanwhile, the resilient sesame tofu is crafted using kombu dashi, the historically renowned Yoshino kudzu starch, and finely ground sesame, all meticulously kneaded together.
