Hokkaido

Surrounded by three oceans and vast expanses of land, Hokkaido is Japan's ultimate "treasure trove of ingredients." A dynamic food culture shaped by its frontier history and indigenous Ainu roots awaits you.
The Soul Food: Genghis Khan & Seafood
- Genghis Khan (Jingisukan): Hokkaido's unrivaled soul food BBQ. Slices of lamb and vegetables are grilled on a special dome-shaped skillet. The vegetables, soaked in savory meat juices, are to die for.
- Soup Curry: Born in Sapporo. A deeply spiced, medicinal-style broth filled with flash-fried, chunky vegetables and a whole chicken leg.
- Kaisen-don (Seafood Bowl): A literal treasure box from the sea, overflowing with premium sea urchin, salmon roe, and fresh crab.
Dining Culture
Hokkaido's food culture is bold, capitalizing on the raw power of unbeatably fresh ingredients. And here's a modern Sapporo twist: instead of finishing a night of drinking with ramen, locals cap it off with an elaborate "Shime-Pa" (closing parfait).
⚠️ Local Rules & Taboos

- Never Feed the Ezo Red Foxes: They are cute but potentially carry a fatal parasite (Echinococcus). Touching or feeding them is extremely dangerous.
- Do Not Trespass on Farms: Never enter the beautiful flower or potato fields for a photo. Bacteria on your shoes can wipe out entire crops.
- Don't Mix Your Soup Curry: Never pour the soup directly over your rice or mash it all together. The correct way is to take a spoonful of rice and "dip" it into the broth.
